Gnocchi of butternut puree, sage and Parmesan cheese

Gnocchi can also be made from butternut puree. Season the puree with egg and herbs and add extra binding with flour and maizena. Form the gnocchi, boil briefly and then fry in perfumed butter with sage and garlic. In this vegetarian dish we serve the butternut gnocchi in an exotic butternut coulis.
