Falafel is originally made from chickpeas. This version shows that we can also create a surprisingly tasty snack in Belgian style to be proud of. This falafel is made from savoy puree mixed with kale puree, seasoned with herbs, Parmesan cheese and garlic. Mix the puree with flour and panko until you can roll balls for frying.
Serve this Belgian falafel variant as a dip with a fresh but spicy yogurt dressing.
