Make the buttermilk puree extra creamy by adding a little milk and Chavroux. Combine with lamb crown and summer vegetables such as broad beans, asparagus and fennel. The tomatoed lamb gravy is made from brown stock, balsamic vinegar, tomato, garlic and sage or other green herbs.
