Croquette of game ragout with Waldorf salad and port syrup

A hearty croquette requires a fresh dish. What a lemon does for a shrimp croquette, a sour apple can do for a game croquette. It gives a surprising contrast in this Waldorf salad with sweetened port.

Use ruby port for the syrup, which has a nicer colour. Add a little sugar to it for reducing. Finish the syrup with a nice old xeres or balsamic vinegar, which gives that little bit of extra excitement.
